Sorry if we don’t have sophisticated wines fermented in walnut shells, or deconstructed dishes with mango-flavored emulsions. Here you’ll only find good local wine — around here we call it u mmìr — and genuine products from our land.
Sorry if we don’t have waiters in livery, ready to fulfill your every desire. Here, we hand you a carafe and a generous basket to bring to your table — stìp’ ca trov’.
Sorry if there’s no air conditioning or designer furniture. We’re in an 18th-century trullo, a UNESCO World Heritage site, and it didn’t feel appropriate.

The Vin Colato Experience
Aperitifs
Boards of local cured meats and cheeses, bruschetta, tarallini. Real food, no fuss. Aperitivo the old way — which turns into dinner if the conversation calls for it.
Listening Club
On weekend evenings the cantina changes its tune. Selected DJs, volumes right for conversation, sounds ranging from soul jazz to experimental electronics. Come with open ears.
